Scrumptious Vegan Mac And Cheese

Classic Mac and Cheese with all of its gooey goodness is the perfect meal to curl up with on a day when you need some comfort food. This vegan version is just as good and makes a ton of cheese so you can slather it all over your pasta.

Ingredients:

½ cups raw cashews or macadamia nuts
1 medium-sized carrot
¼ cup nutritional yeast
1 teaspoon white or cider vinegar
½ cups water, more for soaking nuts
2 teaspoons oil or buttery spread
1 teaspoon salt
¼ teaspoon onion powder
⅛ teaspoon ground nutmeg
3 serving of your choice of pasta

Method:

First, you have to prepare the nuts. Put them in a bowl full of water, cover them and let them soak for around 2-6 hours or even overnight if you want them to be really soft. Just remember to refrigerate them if you let them soak overnight. Next, drain them and put them in a blender. From there you will want to steam or roast the carrot so that it is cooked through. Add this to the nuts, along with the yeast, vinegar, and oil. Then blend it all together until it forms a smooth consistency almost like that of, yes, a cheese sauce!

Now, you will want to prepare your desired noodles a good rotini or penne can be nice to mix up the traditional mac and cheese recipe. Once these are cooked to the desired softness you can drain them with a colander and set them aside.
