Juicy Jackfruit Tacos

Tofu can be flavored with a variety of spices to make it a tasty meat substitute but it doesn’t have the same texture which can make it a good choice for a stir fry but not for tacos. You want something that has the texture of shredded chicken which is where the wonder substitute jackfruit comes in. It takes on the flavor of any spice you use with it and it has the perfect texture to create an amazing tangy taco filling. Here is what you need to create the perfect vegan tacos.

Ingredients:
2 Cans of Jackfruit in Water
2 Tablespoons of Coconut Oil
½ of a Large Onion
4 Cloves of Garlic
½ Teaspoon of Salt
1 Tablespoon of Smoked Paprika
1 Tablespoon of Cumin
1 Tablespoon of Chili Powder
2-3 Tablespoons of Maple Syrup
1-2 Small Chipotle Peppers in Adobo Sauce
1 Teaspoons of Adobo Sauce
⅔ Cup of Water
3 Tablespoons of Lime Juice
Corn Tortillas
Red Cabbage, Shredded
Refried Beans
Salsa

Method:

First, the jackfruit needs to be prepared so that it can be shredded into a meat-like consistency. Drain the cans of jackfruit and thoroughly rinse all the pieces, then slice the core of the jackfruit out as it is not the tasty bit. The rest can be sliced up and the shredded parts pulled apart. Put all the pieces into a colander and give it a rinse again. Now it is time to mix up this delicious filling.

You will need to select a large frying pan and place the coconut oil in it over a medium heat to get it to melt. The garlic should be minced and the onion sliced before it is placed in the pan and sauteed. When the onions are translucent and soft it is time to mix in the jackfruit and all of the spices, maple syrup, chipotle peppers, adobo sauce, water, and the lime juice. Once all the components have been covered in the mixture and it is simmering nicely bring the heat down to low. You will want to cover it with tin foil or a lid and let everything cook together for around 20 minutes to half an hour. This will infuse the jackfruit with all of the spices. The jackfruit should begin to soften and can be pulled apart some more. You will want to taste the filling to see if you want it to have a spicier or smokier flavor.

The filling is now ready to go, and you can add it to a taco salad or select a corn tortilla and fill it up with a mix of black beans and cabbage with some lime juice squeezed on top. It will definitely not disappoint!
