Tropical Vegan Coconut and Lime Bites!



The weather might be dull and dreary but one bite of these treats will instantly transport you to the sandy white beaches of some deserted island. These vegan bites are delightfully refreshing and tropical-tasting with just a touch of sweetness. Coconut and lime make for an unexpected but delicious flavor combination! If you’re not a huge fan of almonds you can substitute the ingredient with your very favorite nut – macadamias would make for a particularly delightful and creamy alternative! If you’d prefer your bites to be sweeter, just adjust the maple syrup measurement according to taste. Recipe yields 25 – 30 bites.

Ingredients:
2 1/2 cups unsweetened shredded coconut
1 1/2 cups raw almonds
1/4 teaspoon vanilla bean powder (or extract)
Zest of one lime
Pinch of fine sea salt
2 tablespoons fresh-squeezed lime juice
2 tablespoons unrefined coconut oil, melted (but room temperature)
1/4 cup pure maple syrup
2-3 tablespoons unsweetened almond milk

Method:
Add the coconut, almonds, vanilla, lime zest, and salt to a food processor; blend on high speed for 30-45 seconds or until the mixture turns into a fine crumble. Drizzle in the lime juice, coconut oil, and maple syrup then process for 10-15 seconds. While the food processor is still running, drizzle in the almond milk and blend just until combined. Using a 1 1/2 tablespoon scoop, drop the bites onto a baking sheet lined with parchment paper. Roll into balls and coat with coconut flour, if desired (though not necessary). Freeze for 30 minutes then transfer to an airtight container. Will keep in the freezer for several months.
