Afternoon Eats: Vegan Pulled Pork Sandwiches

Who doesn’t love a pulled pork sandwich slathered in barbecue sauce and topped with a nice apple coleslaw for some cool creamy goodness? We know we love it but over here we like to have a good vegan option for anything meat-related. And this recipe for vegan pulled pork sure hits the spot so we wanted to share it with you!

2 Cups of Water
1 Cup of Green Lentils
2 Tablespoons of Olive Oil
1 Onion, Halved
1 ½ Cups of Shredded Carrot, Packed Tight
2 Tablespoons of Brown Sugar
1 ½ Teaspoons of Paprika
1 Teaspoon of Garlic Powder
A Dash of Salt and Pepper
¾ Cup of Vegan Barbecue Sauce
2 Tablespoons of Water
4 Hamburger Buns

First up, you need to prepare the lentils as they need to be nice and soft for when it comes time to form the patties. To get them just right you will need a small saucepan with two cups of water in it, along with the washed lentils. Bring the mixture to a boil and then to low heat with the lid off and let them cook for about 20 minutes or until they are nice and soft. Once this is done, let them drain in a colander.
Now it is time to prepare the vegetables which will be used in the ‘pulled pork.’ Shred the carrot, either with a grater or in a food processor. Cut the onion in half and slice it. Now, turn the heat under the pan to a medium heat. Pour in the two tablespoons of olive oil and add the onion to it when it is hot. Fry the onion until it is soft and translucent. Once that is finished you can then add the lentils, carrots, sugar, garlic powder, paprika, more salt/pepper, and finally the barbecue sauce. Make sure everything is mixed together, especially the spices. Turn the heat to medium and let the whole mixture heat up together. It should start to thicken up a bit.

If you do not like how grainy the mixture is and would like it to be smoother you can add half of it to your food processor so that some of it is smooth but with a bit of chunk to it. When you have the desired consistency then it is ready to be served upon a bun with some coleslaw on top!
