The Perfect Pancakes: Vegan Style

Everybody loves some good breakfast food but those fatty pieces of bacon and the artery-clogging sausages while delicious are not always the best thing to start your day with. These vegan pancakes are the tasty breakfast treat that will have you wanting to get out of bed and start the day. Don’t forget to add some fresh cut fruit and delicious maple syrup to top the whole thing off. Maple syrup is natural after all!

1 ½ Cup of Flour
1 ½ Tablespoons of Baking Powder
1 ½ Cups of Non-Dairy Milk (coconut, almond, soy, etc.)
3 Tablespoons of Cane Sugar
3 Tablespoons of Canola or Coconut Oil
⅛ Teaspoon of Salt
Vegan Butter
Bananas, Strawberries, Blueberries, etc. for Garnish

This recipe makes about eight medium-sized pancakes. First, you will want to grab a medium sized mixing bowl. Then take the dry ingredients (flour, baking powder, sugar and salt) and mix them all together in the bowl. Next up, add the wet ingredients (non-dairy milk and oil). You may want to heat up the coconut oil if you decide to use that one otherwise it will not combine in solid form. Once the wet and the dry ingredients have been mixed together and formed a smooth consistency you will want to let the batter sit for around five minutes. This will give it time to fluff up and create those puffy pancakes which are so delicious.

Now it is time to heat up a frying pan to make your first batch of pancakes. Turn the burner on medium heat and add a tablespoon of vegan butter. Once the butter has melted and dispersed in the pan you can add the batter to make a pancake of the size you want. When the outer edges turn golden brown and the inside of the pancake starts to get little holes poking through it is ready to flip. Each side should take between three to five minutes to turn a nice golden brown. Once they are ready to serve you can plate them and add a garnish of your choosing. Some banana slices or strawberries are always a hit.
If you want to make a fancy berry dressing you can consider making a berry sauce with blueberries or raspberries which will add a nice but albeit sugary topping that will make the whole pancake stack look picture perfect.
