It’s a decadent, creamy delight that won’t have you slaving over an oven or leave you in a sugar-induced slump. Wow your tea-time guests or treat yourself with this easy and scrumptious vegan dessert!
1/2 a large, very-ripe banana
2 tablespoons high quality cocoa powder
2 tablespoons male syrup or organic honey
4 tablespoons almond butter
5 drops pure vanilla extract, or more if desired
1. Blend all ingredients together in your blender or food processor. Be sure to taste the mixture to gauge whether you’d like to add a little more of your chosen sweetener.
2. Spread into a wax paper-lined container.
3. Refrigerate overnight, or freeze for a few hours. The cake will keep in the freezer for weeks. Let the cake thaw for at least 20 minutes prior to eating. This recipe makes a small cake. Feel free to double or triple the recipe if you’re catering to a larger crowd.
4. Garnish with desiccated coconut, chopped nuts or fresh fruit.
