The Very Best Fudgey Guilt-Free Black Bean Brownies

Ingredients:
1 1/2 cups black beans, drained and rinsed well
2 tbsp high-quality cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/3 cup pure maple syrup, honey, or agave
1/4 cup coconut oil
2 tsp pure vanilla extract
1/2 tsp baking powder
1 cup dark chocolate chips

Method:
1. Preheat the oven to 350 F. and prepare your 8×8 baking pan with cooking spray.
2. Combine all the ingredients except the chocolate chips in a good food processor, and blend until completely smooth. A blender can work if you absolutely must, but the texture will be much better in a food processor.
3. Stir in the chips, then pour into the pan. Optional: sprinkle chopped nuts or extra chocolate chips over the top of the mixture.
4. Cook the black bean brownies for 15-18 minutes, then let cool at least 10 minutes before trying to cut. Makes 9-12 brownies.
