As more and more people turn toward health-conscious living, many are discovering that a lactose-free diet is best for optimal health. There are so many fabulous milk alternatives on the market and one of our favorites is delicious and nutritious coconut milk. Instead of heading to the supermarket to get your coconut fix here’s a guide as to how to make your very own coconut milk. Add the milk to veggie curries, smoothies or your morning cappuccino.
1 (8-ounce) package unsweetened shredded coconut
4 cups hot (near boiling) water
Nut milk bag (see Recipe Note)
Mason jars (for storage)
1. Place the coconut and water in a blender and allow the mixture to rest for 5 – 20 minutes. The coconut will soften and be much easier to blend.
2. Blend on high for 1 to 2 minutes until the coconut is puréed and the mixture looks milky.
3. Place the bag inside a medium bowl. Pour the coconut mixture from the blender into the nut milk bag.
4. Cinch the nut milk bag shut. Take the bag in both hands and squeeze it out over the bowl. Wring out your bag until you’ve extracted as much of the milk as possible. Bottle the coconut milk and enjoy!
