There’s nothing like sneaking a superfood into one of your favorite comfort food recipes to make it pack just a little more of a nutritional punch. Chia seeds are high in fibre and spectacularly rich in healthy fatty acids. This recipe is also dairy-free and super rich in protein! 1⁄4 cup gluten-free all purpose flour
2 tablespoons coconut flour
3 tablespoons vanilla whey protein powder
1⁄2 teaspoon baking powder
pinch of sea salt
1 tablespoon chia seeds
1 tablespoon coconut flakes
4 tablespoons almond milk
1. Combine all the dry ingredients in a large mixing bowl. Then slowly add wet ingredients and stir to combine.
2. Heat a non-stick pan and coat with coconut oil. Pour 2 tbsp of batter to form each pancake.
3. Cook a few minutes on either side until golden brown or bubbles start to form on the top. Serve with fresh fruit, yoghurt, nuts and honey.
