The Ultimate Avocado Chocolate Pudding

There are few sweet treats that delight quite like creamy, nostalgic chocolate pudding. The unlikely addition of avocado gives this dessert a luscious texture and a deepened rich flavor. Best of all? The recipe is vegan and gluten free! The addition of dark chocolate also gives this yummy dish an added health kick. Ingredients:
4 very ripe Hass avocados
1/4 cup non-dairy milk
3 to 5 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
1/4 teaspoon fine salt
2 to 3 ounces dark chocolate (70% or higher)
1/4 cup agave nectar or maple syrup

Optional toppings: chopped nuts, nut butter, sliced banana or a dash of cinnamon.

Method:
1. Cut the avocados and add the flesh to a blender or food processor. Add the milk, cocoa powder, vanilla, and salt to the mix. Cover and process or blend until fully combined and the avocado is smooth, 30 to 45 seconds.

2. Melt the chocolate in the microwave in short intervals, stirring in between. Add your chosen sweetener to the melted chocolate and stir until smooth and fully combined.

3. Quickly add the melted chocolate to the avocado mixture. Process or blend until smooth. Add more sweetener if needed or milk if a thinner consistency is desired. Chill, add some yummy toppings and serve!
