Vegan Avocado Pasta with Smoky Pecans For Your Christmas Party



Pasta! It’s the hearty delight that never disappoints a hungry belly. This pasta recipe boasts a little something different. Incorporating oh-so-delicious (and healthy!) avocado into this vegan sauce makes for a spectacular creaminess. If you’re looking to give this dish an added vitamin-kick opt for zucchini noodles! It might be difficult to believe but this plate only takes 20 minutes to prepare. For a quick, budget-friendly dinner or fall lunch with friends go for this yummy dish.

Ingredients:
8 oz pasta such as spaghetti
1 ripe avocado
1 small clove of garlic or 1/4 tsp garlic powder
2 tsp extra virgin olive oil
2 tbsp lemon juice
1/4 cup packed basil , plus additional for garnish
3/4 cup water
1/2 tsp salt
1 tsp nutritional yeast
black pepper or cayenne
zest of 1/2 a lemon divided
For the pecans:
1/2 cup chopped pecans
1 tsp oil
1/2 tsp smoked paprika
1/2 tsp sweet paprika
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp oregano

Method:
Cook the pasta according to package instructions and drain. Blend the avocado with the rest of the ingredients and zest of quarter of a lemon. Add more water as needed. Taste and season accordingly.
Add oil to the pecans and mix well. Add the spices, mix to coat and bake at 325 degrees F for for 15-20 minutes. If using a skillet, simply toss nuts in spices and roast on medium heat fro 4 – 5 minutes.
Mix the avocado sauce and pasta. Garnish with the smoky pecans, chopped basil, remaining lemon zest and enjoy!
