It’s officially Fall and we are celebrating the festive time of year with the ultimate vegan smoothie. But this 6-ingredient smoothie is unlike any other, it’s made with the vividly-colored veg that we simply can’t get enough of at this time of year… pumpkin! This dairy-free smoothie makes use of all our favorite flavors of the season. Think: cinnamon, cloves and pumpkin spice. This treat is perfect for a delicious start to the day or an early morning pick-me-up!
1 can light coconut milk, chilled
3 medium bananas, sliced and frozen
¾ cup 100% pure pumpkin puree
1 tablespoon pure maple syrup
1 teaspoon pumpkin pie spice
¼ teaspoon pure vanilla extract
1. Place the can of light coconut milk in the refrigerator for 1-2 hours, or until completely chilled.
2. Add bananas into the blender. Blend until bananas become crumbly. Add coconut milk. Blend until smooth and creamy.
3. Add the rest of the ingredients: pumpkin, maple syrup, pumpkin pie spice and vanilla. Blend until smooth.
4. Pour into two cups and enjoy! Optionally, top with coconut whip and ground cinnamon.
